Move In Day

Thank you for all your comments on the crazy eating adventures. I LOVED reading them all! If you missed out on what I am talking about, you can catch them here and here.

I think it is so interesting to find out the there are so many other people that are dealing with the same kinds of things and learning from eachother is so helpful!

So intersting to find out how many of you were former vegan or vegetarians at one time. It is a TOUGH lifestyle to maintain in the world we live in today. I feel MUCH more normal now thanks to all of you. I am going to go tell Ben. ;)

Now that I have filled you in on how crazy I have to eat right now, I feel like I can post more of what I am eating without anyone freaking out on me. Maybe cause I eat things like this for BREAKFAST.

Broiled salmon and broccoli...


 With a HUGE plate of kale chips!


This might LOOK like an enormous meal but veggies don't go that far. I have to eat LOTS and lots of them to get enough to eat.

Just a typical breakfast over here. Ha. So weird right? The first few days it was really weird to wake up and eat stuff like this. I guess I am in the grove now because I am usually so hungry after the gym now I don't even care. What is this coming to!?!

Yesterday was moving day over here! Ben's parents are now here for real and getting settled in!

For those of you who are totally confused... we have been living in Vance and Christine's house for the 4 years that we have been married. They haven't lived here in this house during that time though because Vance was in the military. They are nice enough to let us bum around with them for a few months until Ben's leaves for his Navy training in October. We are actually excited for all the time we are going to get to spend with them before we move away. They are so laid back and great I have no worries about ANY of this. ;) Vance and Christine are the BEST!

They got here LATE last night and were still up at the crack of dawn to start unloading the truck. Stamina people... they are amazing. I was tired just watching them.


I felt pretty useless with my lack of energy lately, there was no chance I was going to be hauling boxes around. Need I remind you 30 mins on the elliptical was enough cardio for me? Pooped. I would probably have made it inside with one box and the needed a nap. I decided to make myself useful instead by making food. Stick to what your good at right!?!


I am still cleansing the pantry a little so I used up some things that have been kicking around. These were given to me, you KNOW these are totally random for me to have in my cupboard. 


But throw in some tortillas, beans and cheese, salsa, chips and fruit... and voila!

Lunch is served.


The boys were especially excited about the IBC Root Beer that was found in the cupboards. I bought it at Christmas for Ben and with all the other goodies around it was forgotten about and pushed to the back of the cupboard. We found it on the perfect day though, everyone worked so hard today! 

Funfetti cookies. Nothing fancy but who doesn't love funfetti? It's just fun!


I should have taken a picture of them getting the extra fridge down to the basement. That was a little scary... ah! It made it down with minimal blood shed but that thing isn't EVER coming back up.

One a sad "Holley your so pathetically WEAK right now note"... I had to have Ben open my jar of coconut oil for me. I haven't had him open a bottle for me in a LONGGGG time. And this was a bottle I have used like 20 times already. Pathetic. I am telling myself I was just to lazy to do it. Ha.

I have been having a hard time sleeping the past couple nights. I don't know if that has anything to do with the Candida diet or not. BETTER not though. I can handle food restrictions but nothing comes between me and my sleep! Crossing my fingers that tonight isn't another restless night again. Boo...

Would you rather pack UP a house or UNPACK one???
Mmm... so tough. Neither is fun but I am gonna say unpack. As long as I don't have to move those boxes.

When was the last night someone else opened a jar for you?
I am humbled. This might be happening much more often for a while.

    I always have others open jars for me...my arms are noodles.

  2. Mmmm those cookies look good. I hate both aspects of packing, but prob unpack also. My bf had to open a jar for me two days ago and its usually pretty often. I'm working on getting more arm muscle lol

  5. how do you make funfetti cookies?!?!?!?

    I don't really like moving/packing at all, but when we moved into our house unpacking was amazing because my mom was there the whole time being like "ok, what needs to be done now!?" so we unpacked the entire house in an afternoon.

  6. Oh man packing up a house and unpacking it are both workouts in itself. When I bought my house last year I couldn't believe how much stuff my sister and I both had to move! It's was crazy! I was like we have to clean out...there's too much stuff!

    I did a "everyone says this is great but I so don't believe them" thing....and it turned out it was great.

    Same with the kale chips. Perhaps I'll have to try them.

  8. I would definitely rather pack! Unpacking overwhelms me because I don't know where to put everything.

    I think you should post about kale chips. I know of kale...but I am kind of unsure about it. :)

  9. I would definitely rather UNpack. Then you get to rediscover all of your possessions and find new places for them!

    Your breakfast looks like a lunch, that must have been an adjustment getting used to eating that in the morning, but kale chips are always delicious!

    I noticed you have a marathon countdown on your sidebar. Are you hoping that you have your energy back for that or are you running it at all? Sorry you're feeling so weak and tired, I hope it passes quickly

  10. Holley!!! I LOVED seeing you at the gym today. made my morning :) I am sorry you are feeling so weak. I hope this improves quickly. I LOVE funfetti. seriously...the best thing ever!

    I would rather unpack as well. At least it is fun to rearrange things :)

  11. I am sorry you are feeling so low on energy. :( I have had a hard time sleeping lately too and I have absolutely no excuse. I think it is just beause it is lighter out so much later and I am so used to going to bed at 9 sharp and lately it has been like 11 or 12. My 5 am wake up call comes early.

    I absolutely hate everything to do with packing and unpacking. I am like you and always willing to provide food. :)

  12. I hope this diet works for you cause buying all those veggies is NOT cheap. BTW I love reading about when you hang out with your mom, she is an amazing lady. Also, thanks for the tip on the book!

  14. um those cookies are BRILLIANT!!! and I HATE packing boxes, it actually makes me very sad. but UNpacking... it feels like christmas!! especially when you are putting everything in its place in a new home!!! congrats! I cant wait to see pics of your new digs :)

  15. i've been eating salad for breakfast lately. my friends think its weird but all those veggies really give me a great start to the day!

    i don't like packing or unpacking...if i had to choose, i'd say unpacking. i think i'm moving in august so i've started doing little once-overs of all the rooms in my apartment and have been throwing out old food/donating food that's not expired and we won't eat and donating books and clothes to good will. i figure its better to clear some of the clutter now because its going to be a big job when it comes time to do it all!

    i've never had funfetti cookies - only cake. i bet the cookies would be really good though!
