Fried Rice and Forever Friends

Love that title right? Ha.

Breakfast this morning (and I just had some more for lunch) was yummy fried rice. I really wanted some last night when my MIL was cooking some up. So breakfast it was!
I sauteed up some onion, celery, carrot, cabbage, garlic & ginger and peas. Then I tossed in some brown rice and a little sesame seed oil to brown it up. It is time to go grocery shopping in my house so my protein choices were slim, so we went with extra lean ground beef.

I cooked up that meat separate because I seriously have problems when I see how much grease and fat comes off when you cook it up. Even when it is "extra lean"! I drained it all off and then totally smashed it with paper towels to get as much fat off as I could. I don't know if we should ever call beef "lean". Alas, it tasted good. ;)

I headed out early, DRESSED and ready to go at a shockingly early hour of the day to meet up with one of my best friends. (Though I wake up early, I battle to shower and change out of my workout clothes before noon.) We roomed together in college and I don't know how I would have survived without her! We chatted for 2 hours, which really felt like 15 mins, before she had to run. I need to pay that girl for a therapy session, AND I need to start getting those weekly. Um... Kate... we would be perfect neighbors!
I think all my friends should just hurry up and join the Navy. That would be a lot easier on me. ;)

How often do you visit with your best friends? I must sadly admit that I don't enough. When I am around them it reminds me of how much I need it though and how they play an important role in my life. When I don't have that interaction I think there really is a bit of a void. Husbands are fab, but there is nothing like an amazing girlfriend. 

My best friends are the people that have helped shape my life and helped me to become who I am. Friends can be such a valuable positive influence in life. I am so lucky to have such amazing ones! ;)
