The garden has been keeping me on my toes this summer! If I don't go out and regularly harvest the goods, I get some suprises. Like a million tomatoes all at once and zucchini the size of my arms!
This sneaky zuck was hiding under some leaves. I swear it appeared overnight!
So what DO you do with such a giant zucchini squash???
I have a few suggestions.
Play it like an oboe...
Or a flute!
Or play a round of baseball!
Nothing a giant squash can't handle.
I will show you what I REALLY did with it tomorrow. ;)
But in the mean time here is one of our favorite ways to use up our bounty of tomatoes.
BLACK BEAN SUMMER SALSA!
There are a million different recipes for it and honestly I make it different each time depending what I am in the mood for. Here is what I usually always have as a base, and then I add in some extras depending on what's on hand/my mood.
BASICS
Black Beans
Corn
Tomatoes
Onion (red or white)
Cilantro
Corn
Apple Cider Vinegar
Jalapeno Peppers or Red Pepper Flakes
Sea Salt
Fresh Ground Pepper
EXTRA OPTIONS
(I don't put them ALL in the same recipe. That would get crraaaazy.)
Green Peppers
Dry Italian Dressing Mix or Italian Spices (Basil, Oregano, etc)
Avocado
Pineapple
Mango
Garbanzo Beans
Cumin
Chili Powder
Fresh Squeezed Lime or Lemon
Garlic
And that is just the options that come to mind off the top of my head. Don't put it past me to throw really ANYTHING in a recipe. ;)
